I absolutely love chestnuts – they are one of my favourite things about the Christmas season. I couldn’t resist trying them in some easy work at home lunches this week. This was one of my favourites, plus it’s super quick so perfect if you’re freelancing at home and totally snowed under (like me!)
Make in 10 minutes
Serves 1
Ingredients
1 tsp oil
2 rashers of bacon, sliced into small pieces
100g chestnut mushrooms, quartered
50g cooked and peeled chestnuts, chopped
Spring of parsley, chopped
Toast
Method
- Heat the oil in a frying pan, before adding the bacon and cooking for two minutes.
- Add in the mushrooms to the pan and fry for a further four minutes, until soft.
- Serve on toast, topped with chestnuts and parsley.
