Not only is this a recipe that requires absolutely no chopping at all, it also uses ingredients with a good shelf life – making it a great meal to cook when you’re low on time as well as groceries. Plus, it’s super tasty too.
Make in 10 minutes
- Serves 1
- 2 of your 5 a day
- Vegetarian
Ingredients
- 70g frozen spinach
- 70g frozen peas
- 250g gnocchi
- 50g feta
- sprig of parsley
Method
This recipe is designed to be made in a tiered steamer for the hob, with the gnocchi boiling in the water at the bottom and the vegetables in steamer insert above. If you don’t have this set-up, just use two separate pans – one to boil the gnocchi and the other with a little water in the bottom, to steam the vegetables.
- Add boiling water to the bottom pan. Place the frozen spinach in the steamer above for 7 minutes.
- Then add the peas in with the spinach. Pop the gnocchi in the bottom pan to boil.
- After 3 minutes strain the gnocchi. Crumble the feta over the gnocchi and stir in the spinach and peas. Tear the parsley over the top. (You could chop the parsley, but then that will ruin the no-chop rule for this recipe!)
Tip
You can of course use fresh spinach instead of frozen here. Just pop them in at the same time as the peas, to shave off a few minutes.
