They look pretty dull, don’t they? They are, in fact, the perfect snack – ready to eat, nutritious and (dare I say it…) delicious.
Edamame beans are young soybeans and are really popular in East Asian cooking. They are rich in protein, fibre and nutrients such as maganese, phosphorus, folate and vitamin K.
These beans don’t require any cooking – you can buy them fresh or, more conveniently, frozen. Just leave a handful to defrost, then squeeze the beans out of each pod straight into your mouth. I like to sprinkle a tiny bit of salt onto the closed pods before popping them, which really enhances the flavour.
You can also buy shelled edamame beans, but they are much less fun!
